The Secret Sweetness
I used to watch my parents make our classic BBQ marinade with soy sauce, calamansi, garlic, and sugar. But now, I swap the sugar with pure honey. It still gives the marinade a sweet taste, but in a different, more delicious way!
My Easy Marinade Recipe
- Mix It Up
- 3 tablespoons of honey (or more if you like it sweeter)
- 1/4 cup of soy sauce
- Juice from 3 calamansi (or 1 small lemon)
- 2 cloves of garlic, minced
- A pinch of black pepper
- Marinate the Meat
- I pour the mixture over chicken, pork, or even tofu, making sure every piece is coated.
- I leave it to marinate for at least an hour, but overnight is even better!
- Grill or Fry
- I cook the marinated meat on the grill or in a pan. The honey creates a lovely caramelized coating that’s both shiny and tasty.
Tips for Honey Grilling
- Don’t Burn It: Honey can burn quickly if the heat is too high. So I keep my grill or pan on medium or low heat, especially towards the end of cooking.
- Taste Test: If it’s not sweet enough, add a bit more honey. If it’s too sweet, add a bit more calamansi or soy sauce. Simple!
Serving My Honey BBQ
My favorite way to enjoy this is with steamed rice or Java rice, plus a side of grilled veggies (bell peppers, onions, or eggplants). The mix of sweet, salty, and tangy flavors is so good that everyone around the table keeps asking for seconds!
